The following diagram illutrates the various methods involved in the process of making cheese. The traditional way of making cheese is by first curdling raw milk. This helps in fermenting microorganisms through the process called inoculation. Whereas, the other method of preparing cheese is by pasteurizing raw milk through standardiztion and filteration. The filtered milk is coagulated with the help of milk proteins called rennet enzymes. Curdled milk is formed and cut into fine pieces and cooked while stirring. The curd formed drains the whey and undergoes milling where the cheese is seasoned with salt and fresh cottage and cheam cheese is formed. The remaining cheese is poured into moulds and pressed with a device which causes additional drain of whey. Cheese obtained is then allowed to ripen for few hpurs or days. To recapitulate, from the diagram it is quite conspicuous that cheese is produced through raw milk and undergoes various processes for the manufacture of ripened cheese.
