The raw material required is mainly raw milk, which is then held by several processes to become cheese. Firstly, the milk is converted into curd, it can be done either traditional method or by the modern method. In the traditional method, the milk is directly sent for the coagulation (curdling) process whereas, in the modern method first the milk has gone through pasteurization process next through standardization and filtration process and then to curdling process. In the curdling process, the fermented microorganisms are mixed in milk along with enzymes, named rennet. The process of mixing fermented microorganisms into milk is known as inoculation. In the next step, the curd is cut by a cutter into small portions. After cutting, the curd is then stirred and cooked for a while to separate whey and curd from others. After the curd is separated from the whey, the whey is drained out from the container. The next step involves the milling process in which the curd is spread on a conveyor belt where the salt is sprinkled on it. Now at this stage, the cheese can be used freshly as cream cheese. Eventually, the fresh cheese is poured into molds and presses through a pressing machine to drain any remaining whey. Finally, the cheese is ready for the ripening process but before that the cheese is taken out of the molds. In last, after the ripening process, the ripened cheese is ready for use.
