In the factory, they are classified by kind and weighed, and the beans are roasted at 100-150°C in large ovens. Once bean shells are cracked leaving cacao nibs, the nibs either are pressed to become cacao butter or are grounded into “chocolate liquor” paste.
In the seventh stage, cocoa butter is mixed with chocolate liquor, milk, and sugar, and is refined through steel rollers. This mix is mixed and aerated to bring out flavour in a cup. The final step includes that it is tempered and poured into mould.
