The procedure for the preparation of cheese was shown vividly using the pictorial representation. This involves series of steps using the raw milk as the main ingredient for the process to start. In the conventional method where the milk was pasteurised, standardised and filtered but in the traditional method it can directly be coagulated. The coagulation can be acheived by adding amounts of rennet enzyme, fermenting microbes. Then the resulted product was cutted and was cooked and stired to form the curds. Here, the whey was drained out and the remaining curd was sent to mill where thw cottage and cream cheese, also called fresh cheese was obtained without the addition of salt. Further salt was added to the remaining curd and was poured into the moulds where it was pressed. This pressing of curd will help to remove the excess whey out. Lastly, the cheese was set for a time period to ripen and then marketed.
