From an overall perspective, it is evident that there are 6 steps involved in the process, consolidated in 5 larger groups according to the ways tea manufactured, commencing with choosing fresh tea leaves and culminating in having them fired or dried.
The first stage is when the tea’s bug or 2 top leaves are picked in order to ensure that the quality is good. Following that is the withering stage in which air would pass through leaves on rack. In the subsequent step, after 60% moisture is out, this immediate product is placed into 2 separate processes to produce 2 different final tea products.
On the one hand, by traditional method making tea leaves to be loose, these leaves are rolled flat in order that enzymes can be released. On the other hand, with modern method to make tea bags, tea leaves are cut, torn and then curled. It is a quick process with smaller granular pieces created. The following stages are oxidation and fermentation which let rolled leaves spread on tiles or cement. With the combination of enzymes and airs, leaves turn into copper color. The process ends with firing and drying theses leaves on oven or hot air dryers, when flavor and aroma are released and totally, there’s 97% moisture out.
