At the first stage in the production of making dough for a pizza, four different additives are put in a stand mixer. They are 4 cups of 500 grams flour, 325 grams water, 2 tablespoons of salt and one and a half tablespoons of dry active yeast, respectively. Then, mix it slowly for 2 minutes. After that, volume up the speed to medium level and start mixing for the next 5 minutes. The subsequent 2 last minutes, turn down the mixer back to the former slow speed to finish the blending stage.
Once mixing has finished, rise the dough for at least 2 hours until it doubles in size as has been shown on the diagram. Following this, all air bubbles need to be completely removed from the dough by hand. Finally, cut the dough into 3 equivalent pieces of 275 grams before using it to make the topping of a pizza.
