Based on the diagram below, it can be observed that a yougurt basically compraises of two primary ingredients, that is milk and live bacteria.
To begin with, the milk is initially heated up to the temperatures of 90C (200F) for around 30 mins. More the time, the thicker the yougurt gets, hence it can be observed that time plays an important factor in the constituency of the yougurt.
The second steps is followed by cooling the milk to lower temperatures around 44C(112F). Once the milk reaches the desired temperature, live bacterias are added to the milk evenly.
The next step is leaving the mixture at room temperature, optimally around 37C for atleast 4 hours. At this stage, it can be observed that the live bacteria tends to react with the milk, in process of turning the milk into think liquid.
